Our Family’s Favorite Thanksgiving Leftovers Dinner! 

What I am about to share is not only my kids’ favorite way to use up any Thanksgiving leftovers, it is also an easy meal that I can throw together with hardly any preparation. 

We call it Thanksgiving Pie!  It’s a play on “Shepherd’s Pie,” and it’s easy and delicious! 

I love to batch cook at various times, so our family uses a lot of disposable pans like these (if you have a Sam’s Club membership, that is often a more cost-effective option, though!). 

Cover the bottom of the pan with a nice, thick layer of mashed potatoes.  

From there, what goes on top depends on what we have available as leftovers, but we love corn, turkey, and gravy best (I usually mix my gravy in with the turkey before layering to make sure I have enough).  

If you love cheese as much as we do, you can add cheese also! 

Then, to make it all beautiful and give a special touch on top, place thawed puff pastry (half roll per 9 x 13 pan) on top.  

If you want, you can do an egg wash on top just to get it more golden brown (in the picture below, the left has the egg wash and the right has none).  

Bake until golden brown and the puff pastry is cooked through (my oven runs hot, but it took about 25 minutes at 400 (convection bake).  If the pastry is getting too brown, simply cover with foil while it continues.  

A couple of quick notes: 

* I like to reheat my inside ingredients (potatoes, corn, turkey, gravy, etc) some first to make sure they are warmed all the way through when the pastry is done cooking. 

* Only have turkey left over? Whip up some instant potatoes, thaw frozen corn, and mix up a packet or two of gravy and make it anyway!
